I’m passionate about….. fundraising

 

Fundraising Dinner
for Vincentia High School

Passion Catering was recently invited to participate in a fundraising dinner for Vincentia High School. We designed a menu around the Hospitality Students so that they could participate in preparing and serving a 3 course dinner for 130 guests.

The menu was challenging and consisted of 5 finger-food items, 2 different main meals served as an alternate drop, as well as a vegetarian meal option and 2 different desserts. The Hospitality staff and students used class time to start preparing, then over the next two nights and the day of the event I worked with them in the capacity of guest chef to finish the preparations.

All of the students showed a willingness to listen, a desire to do their best and applied themselves to perform all of the tasks asked of them.

The P&C organizers and teachers had transformed the VHS hall into an entertainment and function centre with the help of Serco who donated equipment and decorations.

On the night of the dinner there was an air of excitement amongst the students and staff, mixed with a few nerves. However once the finger-food, mains and dessert were served without a hitch, this turned to jubilation.

Both floor and kitchen staff (the hospitality students) performed above expectations making the overall event was one of the best that Passion Catering has been associated with. Kim and I would like to thank all of those involved.

Here is the recipe to one of the finger-food items served on the night.

 Blue-Cheese Tartlet

 Ingredients

50g blue-vein cheese

100g philli or mascapone cheese

30ml cream (optional)

1 egg yolk

1 whole egg

2-3 tblsp plain flour

 Method

  1. Mix together all ingredients except flour. Sift in flour, mix well. Place into pastry shells.*

  2. Bake 180C for 10 mins until tart is slightly brown, puffed up and set.

  3. Serve with spiced pears and balsamic honey

 *Can use your favourite shortcrust or puff pastry. Both can be bought pre-prepared.

World Champion marathon swimmer, Shelley Taylor-Smith wrote, “When you feel in your innermost being that you will achieve what you set out to do, you open the way for miracles.”

How many of us have seen people with lesser ability achieve success and the admiration of others? What makes them different? Self-belief.

I recently attended a conference called “Live and Work with Passion”, at which some inspiring speakers motivated, energised and entertained 240 of us in the audience.

One of the speakers, Tracey Verdugo said, “The only thing that separates those of you who say you are creative and those of you who say you aren’t – is self-belief.

The world is changing so fast that the man who says it can’t be done is generally interrupted by someone doing it.” Harry Emerson Fosdick.

Sometimes this requires us to step outside our comfort zone. To continually move forward we must continually step through our fears. Look upon this type of fear as a good thing. Without it there is no growth. So many people never step outside their comfort zone. You should feel elated and proud when you do.

Add some passion to your life!
